What do we REALLY "understand"?

What is the meaning of "understanding"? Perception? Communication? Intellect? What tells us whether we've understood something? I think this topic would be great for a philosophy paper, but I don't know where to start with it and some good resources to defend the arguement either way. Can someone help?
